We tested it in-game and dug into the Bank Instructions panels. The answer is clear:

1-day and 3-day deposits give about the same interest per day.
5-day deposits give way more interest per day than both.
Higher bank levels buff all three options, but the relationship between them stays the same.

So the real decision is not “Which term is stronger?” but “How long can I safely lock my Crystal Gold?”

When you tap a bank and open Bank Instructions, you see two tabs:

Deposit Interest – shows interest % for 1-day, 3-day, and 5-day at each Bank Level.
Level Info – shows bank income, capacity, and max depositors.

Safe from abandonment: If your alliance abandons the bank, existing deposits are still honored.
